How to check if honey is pure
An honest guide to spotting original honey: which checks help, which popular tests mislead, and what proves purity.
Adulterated honey is a real problem in Pakistan. Syrups made from sugar, rice or corn are cheap, and sellers can blend them into honey in ways that fool the eye. That is why so many families search for a quick home test.
The short answer: home tests give you clues, not proof. Combine a few good clues, buy from a seller who is open about how the honey is produced, and treat the famous water and flame tests with caution.
Seven ways to check honey
Watch for crystallisation
Useful clueLeave a jar at room temperature through a cool season.
Most raw honey thickens and turns grainy over weeks or months because of its natural glucose. Honey that stays perfectly clear and runny for years has often been heated or filtered hard. Some honeys crystallise very slowly, so this is a clue, not a verdict.
Taste and smell it
Useful cluePut a little on your tongue and let it sit.
Real honey carries the character of its flower: floral lavender, herbal ajwain, mild clover. It may leave a light warmth in the throat. A flat, one-note sugary taste with no aroma is a warning sign.
Read the label and ask the seller
Most practicalLook for the floral source, and ask whether it was heated and whether the bees were sugar-fed.
A seller who can answer clearly is taking responsibility for the product. Vague labels such as 'pure natural honey' with no source, no process and no contact details deserve caution.
The water drop test
Not reliableDrop a spoon of honey into a glass of water.
Thick honey tends to sink and settle, while thin syrup disperses faster. But thick adulterated syrups also sink, and runny raw honey can spread. It mostly measures thickness, not purity.
The matchstick or flame test
Not reliableDip a matchstick tip in honey and try to light it.
Low-moisture honey may let the match light, while watery honey stops it. Moisture varies naturally with season and climate, and syrups can be low-moisture too. It says little about adulteration.
The thumb and paper tests
Not reliablePut a drop on your thumb or on blotting paper and see if it spreads or soaks in.
These again reflect thickness and moisture. They can flag very watery honey but cannot tell a thick sugar syrup from real honey.
Laboratory testing
ConclusiveA food-testing laboratory analyses the honey.
Labs measure moisture, HMF (a marker of heating or age), sugar profile, and use isotope or NMR methods to detect added cane, corn or rice syrups. This is the only way to prove purity.
How we keep our honey honest
Sook ul Zahra honey is raw: no heat, no sugar feed. We never give our bees sugar syrup, and we strain the honey rather than heat it, so it crystallises naturally and keeps the taste of its flower.
